I paid with my Starbucks Card using Apple Wallet however the barista said that the balance on the card is different from what is displayed.

Sometimes the balance will not update automatically on your Wallet.

If you are unsure if the Wallet is showing the correct balance, press the "i" button when viewing your Starbucks Card and check the last time it was updated. Flick down on the page to update this if needed and this will update your balance.

If you encounter any issues with it updating, please ask your barista to provide you with a receipt with the balance to show you the correct balance at the time to your visit.

You can also check your balance and recent trasanction history using the Starbucks Mobile App.
